  • 3 cloves Garlic Minced
  • 2 tbsp Soy Sauce Low-sodium preferred
  • 1 tbsp Dark Soy Sauce Can substitute with regular soy
  • 1 cup Coconut Milk Full-fat recommended
  • 1 tbsp Brown Sugar Can substitute with honey or coconut sugar
  • 2 tbsp Fresh Lime Juice Freshly squeezed is best
  • to taste Salt
  • to taste Pepper
Chicken Ingredients
  • 2 lbs Chicken (Dark Meat) Thighs or drumsticks preferred
  • 8 pieces Skewers Soaked in water

Method
 

Preparation Instructions
  1. In a mixing bowl, whisk together the grated fresh ginger, minced garlic, soy sauce, dark soy sauce, coconut milk, brown sugar, fresh lime juice, salt, and pepper until you have a smooth mixture.
  2. Add the chicken to the marinade, ensuring each piece is fully coated. Cover and refrigerate for at least 30 minutes.
  3. Thread the marinated chicken onto soaked skewers, leaving space between pieces.
  4. Preheat grill to medium-high and lightly oil the grates.
  5. Grill the skewers for 4-5 minutes on each side until the chicken reaches 74°C (165°F).
  6. Remove from grill, squeeze fresh lime juice over, and serve immediately.
