  • 1 pound Chicken (dark meat preferred) ensures moistness and tenderness
  • 8 skewers Skewers soak wooden skewers in water for at least 30 minutes

Method
 

Preparation Steps
  1. In a mixing bowl, whisk together the fresh ginger, minced garlic, soy sauce, dark soy sauce, coconut milk, brown sugar, lime juice, and a pinch of salt and pepper until combined.
  2. Cut the chicken into bite-sized pieces and add to the marinade, coating thoroughly. Cover and refrigerate for at least 30 minutes.
  3. Soak wooden skewers in water to prevent burning. Thread the marinated chicken onto the skewers.
  4. Preheat your grill to medium-high heat and oil the grates.
  5. Grill the skewers for about 4 to 5 minutes on each side until internal temperature reaches 74°C/165°F.
  6. Remove from grill and squeeze fresh lime juice over the top before serving.
