Preparation Steps
- In a mixing bowl, whisk together the fresh ginger, minced garlic, soy sauce, dark soy sauce, coconut milk, brown sugar, lime juice, and a pinch of salt and pepper until combined.
- Cut the chicken into bite-sized pieces and add to the marinade, coating thoroughly. Cover and refrigerate for at least 30 minutes.
- Soak wooden skewers in water to prevent burning. Thread the marinated chicken onto the skewers.
- Preheat your grill to medium-high heat and oil the grates.
- Grill the skewers for about 4 to 5 minutes on each side until internal temperature reaches 74°C/165°F.
- Remove from grill and squeeze fresh lime juice over the top before serving.
