Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked brown rice
  • 1 avocado diced
  • 1 cup corn fresh, frozen, or canned
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • Juice of 1 lime
For the creamy garlic sauce:
  • 1/2 cup sour cream
  • 2 tablespoons mayonnaise
  • 2 cloves garlic minced
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Method
 

  1. In a bowl, combine the shrimp, olive oil, smoked paprika, garlic powder, salt, and black pepper. Toss to coat the shrimp evenly.
  2. Preheat a grill or grill pan over medium-high heat.
  3. Grill the shrimp for 2-3 minutes on each side until they are pink and opaque. Remove from heat.
  4. In a separate bowl, mix the corn, cherry tomatoes, red onion, cilantro, and lime juice. Season with salt and pepper to taste.
  5. For the creamy garlic sauce, whisk together the sour cream, mayonnaise, minced garlic, lime juice, salt, and pepper in a small bowl until smooth.
  6. To assemble the bowls, divide the cooked brown rice among serving bowls. Top with grilled shrimp, avocado, and corn salsa. Drizzle with creamy garlic sauce.
