Ingredients
  

For the Wrap
  • 1 medium Zucchini Can be replaced with yellow squash.
  • 1 medium Red Bell Pepper Substitute with orange or yellow bell pepper.
  • 1 medium Yellow Bell Pepper Green bell pepper can be used for a bit of bitterness.
  • 1 medium Red Onion White onion can be used for a milder taste.
  • 1 cup Cherry Tomatoes Halved grape tomatoes can be substituted or omitted.
  • 2 tablespoons Olive Oil Can use avocado oil as a substitute.
  • to taste Salt

  • 4 large Whole Wheat Wraps Substitute with gluten-free tortillas.
  • 1 cup Hummus Any variety works.
  • 2 cups Fresh Spinach or Arugula Other leafy greens can be used.
For the Zesty Herb Sauce
  • 1 cup Greek Yogurt Switch to dairy-free yogurt for a vegan option.
  • 2 tablespoons Lemon Juice Lime juice can be used as an alternative.
  • 1 teaspoon Lemon Zest
  • 2 tablespoons Fresh Dill Can use fresh basil or cilantro.
  • 2 tablespoons Fresh Parsley Can be replaced with more dill or omitted.
  • 2 cloves Garlic (minced) Roasted garlic works for a milder taste.

Method
 

Grilling Process
  1. Preheat your grill or grill pan to medium-high heat, around 400°F (200°C).
  2. In a large bowl, combine chopped zucchini, red bell pepper, yellow bell pepper, red onion, and halved cherry tomatoes. Drizzle with olive oil and season with salt and pepper. Toss until fully coated.
  3. Place the seasoned vegetables on the hot grill. Grill for 5–7 minutes, turning occasionally until tender and charred.
  4. Remove the vegetables from the grill and allow them to cool slightly.
  5. Mix Greek yogurt, lemon juice, lemon zest, dill, parsley, garlic, and a pinch of salt and pepper in a bowl until smooth.
  6. Lay a whole wheat wrap flat, spread 1/4 cup of hummus in the center.
  7. Layer grilled vegetables and fresh spinach or arugula on top of the hummus.
  8. Drizzle the Zesty Herb Sauce over the vegetable layer.
  9. Roll the wrap tightly and slice in half for serving.
  10. Repeat with remaining ingredients to assemble more wraps.
