Grilling Process
- Preheat your grill or grill pan to medium-high heat, around 400°F (200°C).
- In a large bowl, combine chopped zucchini, red bell pepper, yellow bell pepper, red onion, and halved cherry tomatoes. Drizzle with olive oil and season with salt and pepper. Toss until fully coated.
- Place the seasoned vegetables on the hot grill. Grill for 5–7 minutes, turning occasionally until tender and charred.
- Remove the vegetables from the grill and allow them to cool slightly.
- Mix Greek yogurt, lemon juice, lemon zest, dill, parsley, garlic, and a pinch of salt and pepper in a bowl until smooth.
- Lay a whole wheat wrap flat, spread 1/4 cup of hummus in the center.
- Layer grilled vegetables and fresh spinach or arugula on top of the hummus.
- Drizzle the Zesty Herb Sauce over the vegetable layer.
- Roll the wrap tightly and slice in half for serving.
- Repeat with remaining ingredients to assemble more wraps.
