Ingredients
  

For the Chicken Marinade
  • 1 pound Chicken Breast or chicken thighs for more moisture
  • 1/4 cup Olive Oil extra virgin recommended
  • 2 tablespoons Lemon Juice or lime juice as a substitute
  • 4 cloves Garlic finely minced
  • 1 tablespoon Oregano dried; adjust if using fresh
  • 1 teaspoon Paprika can be replaced with smoked paprika
  • Salt & Pepper to taste
  • Red Pepper Flakes for added heat; omit if desired
For the Fresh Salsa
  • 1 cup Cucumbers chopped
  • 1 cup Tomatoes fresh, chopped
  • 1/2 cup Bell Pepper diced
  • 1/4 cup Red Onion diced
  • 1/4 cup Parsley chopped
  • 1/2 cup Feta Cheese crumbled
For Serving
  • 4 pieces Pitas or tortillas/lettuce wraps
  • 1 cup Tzatziki Sauce or sour cream/yogurt if unavailable

Method
 

Step‑by‑Step Instructions
  1. In a medium bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, and salt and pepper. Mix in red pepper flakes for heat.
  2. Add chicken breast to the marinade, coating evenly. Cover and marinate for at least 15 minutes or up to 45 minutes.
  3. Chop cucumbers, tomatoes, bell pepper, and red onion. Combine in a bowl with parsley and feta cheese. Drizzle with lemon juice and season.
  4. Heat a skillet over medium-high. Add olive oil and then marinated chicken. Cook for 3-5 minutes per side until cooked through.
  5. Warm pitas over gas flame or in a skillet, about 1 minute per side, or wrapped in foil in the oven at 350°F for 5 minutes.
  6. Assemble tacos with grilled chicken, salsa, and tzatziki sauce. Serve immediately.
