Preheat your grill to medium-high heat.
In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and black pepper.
Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 15 minutes.
Once the grill is hot, lightly oil the grates to prevent sticking.
Place the salmon fillets skin-side down on the grill. Cook for about 4-5 minutes, then carefully flip and grill for another 3-4 minutes, or until the salmon flakes easily with a fork.
Remove the salmon from the grill and let it rest for a couple of minutes.
Serve the salmon with lemon wedges and garnish with fresh parsley.
