Ingredients
  

For the Marinade
  • 4 pieces Boneless Skinless Chicken Breasts
  • 2 tablespoons Olive Oil Use extra virgin for best flavor.
  • 2 tablespoons Lemon Juice Fresh juice preferred.
  • 3 cloves Garlic Finely minced.
  • 1 teaspoon Cumin A pinch enhances flavor.
  • 1 teaspoon Salt Kosher salt preferred.
  • 1 teaspoon Pepper
For the Avocado Topping
  • 2 pieces California Avocado Ripe avocados preferred.
  • 1 small Red Onion Finely diced.
  • 1 cup Tomatoes Chopped, cherry tomatoes preferred.
  • 1/4 cup Cilantro Chopped.
  • 1 tablespoon Lime Juice To prevent browning.

Method
 

Grilling Instructions
  1. Preheat your grill to medium-high heat, around 375°F (190°C).
  2. In a medium bowl, whisk together olive oil, lemon juice, minced garlic, cumin, salt, and pepper for the marinade.
  3. Add chicken breasts to the marinade, turning to coat. Allow to marinate for at least 15 minutes.
  4. Grill marinated chicken breasts for about 6-7 minutes on each side until internal temperature reaches 165°F (75°C).
  5. While chicken rests, mix diced avocado, red onion, tomatoes, cilantro, and lime juice for the topping.
  6. Slice the chicken and spoon avocado topping over before serving.
