- Grate one cucumber into a bowl, then squeeze out any excess moisture using a clean kitchen towel. In a separate bowl, combine the drained cucumber with Greek yogurt, lemon juice, dill, garlic powder, and olive oil. Stir until smooth, and set aside.
- In a large mixing bowl, add shredded chicken, red onion, and kalamata olives. Crumble in feta cheese and add parsley. Gently toss these ingredients together.
- Drizzle the tzatziki sauce over the chicken mixture, gently fold until all ingredients are thoroughly coated, maintaining the chunks of feta.
- Taste the salad and adjust seasoning with salt, black pepper, or lemon juice as necessary.
- Cover the salad with plastic wrap and chill in the refrigerator for at least 30 minutes.
