Ingredients
  

For the Tzatziki Sauce
  • 1 cup Greek Yogurt Substitute with non-dairy yogurt for a dairy-free option
  • 1 medium Cucumber Grate and squeeze dry to avoid excess water
  • 2 tablespoons Lemon Juice Fresh juice recommended
  • 2 tablespoons Fresh Dill Can substitute with fresh mint
  • 1 teaspoon Garlic Powder Fresh minced garlic can be used
  • 1 tablespoon Extra Virgin Olive Oil Avocado oil can also be used
For the Salad
  • 2 cups Shredded Chicken Use rotisserie chicken for convenience
  • 1 medium Red Onion Shallots can be a milder alternative
  • ½ cup Kalamata Olives Substitute with green olives if preferred
  • ½ cup Feta Cheese Can be replaced with goat cheese
  • ¼ cup Fresh Parsley Can substitute with chives or omit

Method
 

Preparation
  1. Grate one cucumber into a bowl, then squeeze out any excess moisture using a clean kitchen towel. In a separate bowl, combine the drained cucumber with Greek yogurt, lemon juice, dill, garlic powder, and olive oil. Stir until smooth, and set aside.
  2. In a large mixing bowl, add shredded chicken, red onion, and kalamata olives. Crumble in feta cheese and add parsley. Gently toss these ingredients together.
  3. Drizzle the tzatziki sauce over the chicken mixture, gently fold until all ingredients are thoroughly coated, maintaining the chunks of feta.
  4. Taste the salad and adjust seasoning with salt, black pepper, or lemon juice as necessary.
  5. Cover the salad with plastic wrap and chill in the refrigerator for at least 30 minutes.
  6. Serve generous portions onto individual plates or serve family-style. Enjoy!
