  1. Wash and scrub the potatoes thoroughly under cool running water. Peel if desired, then cut into 1-1.5 inch wedges or 1-inch chunks.
  2. Soak the cut potatoes in a bowl of cold water for 30-60 minutes, then drain and pat dry with kitchen towels.
  3. Preheat your oven to 400°F (200°C). Prepare the flavor-infused coating next.
  4. In a large mixing bowl, whisk together lemon juice, olive oil, minced garlic, oregano, salt, and black pepper. Toss the potato pieces in this mixture.
