In a small bowl, mix together the olive oil, dried oregano, garlic powder, salt, and black pepper. Rub this mixture all over the lamb chops and let them marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.
While the lamb is marinating, prepare the mint yogurt sauce. In a medium bowl, combine the Greek yogurt, chopped mint leaves, lemon juice, and honey (if using). Stir until well combined and set aside in the refrigerator until ready to serve.
Preheat your grill or grill pan over medium-high heat. Once hot, add the lamb chops and cook for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness.
Remove the lamb chops from the grill and let them rest for 5 minutes before serving.
Serve the lamb chops with a generous dollop of mint yogurt sauce on the side.
