  • 1 pound Ground Beef (80/20)
  • 1 Onion (chopped) yellow or sweet onion
  • 2 Garlic cloves (minced) fresh
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Smoked Paprika or regular paprika
  • 1/2 teaspoon Ground Cumin
  • Salt & Pepper to taste
  • 1 tablespoon Olive Oil or vegetable oil
For the Tzatziki
  • 1 cup Greek Yogurt full-fat
  • 1/2 cup Cucumber (grated) squeezed dry
  • 1 tablespoon Lemon Juice fresh
  • 2 tablespoons Fresh Dill (chopped) or dried
For the Bowl
  • 2 cups Cooked Rice or Quinoa
  • 1 cup Cherry Tomatoes (halved) or grape tomatoes
  • 1/2 cup Red Onion (thinly sliced) or green onions
  • 1/2 cup Kalamata Olives or green olives
  • 1/2 cup Feta Cheese (crumbled) or goat cheese
  • Fresh Parsley or Dill (for garnish)
  • Lemon Wedges (optional)

Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and chopped dill. Season with salt and pepper. Mix until smooth and refrigerate for at least 30 minutes.
  2. Heat olive oil in a skillet over medium heat. Add chopped onion and sauté until softened.
  3. Stir in minced garlic and cook for an additional 30 seconds.
  4. Add ground beef, dried oregano, smoked paprika, ground cumin, and season with salt and pepper. Cook until well browned, about 8-10 minutes.
  5. Heat cooked rice or quinoa until warm. Fluff with a fork and divide into serving bowls.
  6. Top the rice or quinoa with the cooked beef mixture, cherry tomatoes, red onion, and kalamata olives.
  7. Dollop the chilled tzatziki over each bowl and garnish with parsley or dill. Serve with optional lemon wedges.
