  • 1 lb Ground Beef (80/20) for flavor and juiciness
  • 1 Onion finely chopped
  • 2 cloves Garlic minced
  • 1 tsp Dried Oregano or Italian seasoning substitute
  • 1 tsp Smoked Paprika
  • 1 tsp Ground Cumin
  • Salt & Pepper to taste
  • 1 tbsp Olive Oil for sautéing
For the Tzatziki
  • 1 cup Greek Yogurt full-fat
  • 1 Cucumber grated and excess water squeezed out
  • 1 tbsp Lemon Juice
  • 1 tbsp Fresh Dill chopped; dried can be used
For the Bowl
  • 4 cups Cooked Rice or Quinoa brown rice or quinoa for nutrition
  • 1 cup Cherry Tomatoes halved
  • 1 medium Red Onion thinly sliced
  • 1 cup Kalamata Olives pitted
  • 1 cup Feta Cheese crumbled
  • 1 tbsp Fresh Parsley or Dill for garnish
  • Lemon Wedges optional, for serving

Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and chopped dill. Mix well and chill.
  2. Heat olive oil in a skillet over medium heat. Add chopped onion and sauté until translucent.
  3. Stir in minced garlic. Add ground beef and seasonings. Cook until the beef is browned.
  4. Spoon cooked rice or quinoa into bowls.
  5. Top each bowl with the beef mixture, followed by tomatoes, red onion, and olives. Crumble feta over everything.
  6. Add tzatziki sauce and garnish with parsley or dill. Serve with lemon wedges if desired.
