Method
 

Step-by-Step Instructions
  1. Cream the butters and sugars together until fluffy and pale.
  2. Combine the dry ingredients in a separate bowl and whisk together.
  3. Incorporate the egg into the butter-sugar mixture.
  4. Gradually add dry ingredient mixture to wet ingredients, mixing on low speed.
  5. Fold in oats and any desired add-ins until evenly distributed.
  6. Chill the dough covered for at least 4 hours.
  7. Preheat oven to 350°F (175°C) and prepare baking sheet.
  8. Portion the dough into balls and place on baking sheet.
  9. Bake for 10 minutes, rotate, and bake for another 6-8 minutes.
  10. If desired, shape cookies with a cutter while warm.
  11. Sprinkle with Maldon flaky sea salt and cool for 5-10 minutes.
