Step-by-Step Instructions
  1. In a mixing bowl, combine cream cheese, granulated sugar, and vanilla extract. Beat until smooth and blended. Scoop 18 portions and freeze for about 1 hour.
  2. Whisk together granulated sugar, ground ginger, ground cinnamon, ground nutmeg, ground allspice, and ground cloves in a small bowl.
  3. Mix flour, baking soda, and salt in a large bowl. In another bowl, cream butter and brown sugar until fluffy. Mix in egg yolks, molasses, and vanilla. Gradually combine dry ingredients to form dough.
  4. Preheat oven to 350°F. Flatten cookie dough, place frozen cheesecake filling in the center, wrap and roll into a ball.
  5. Roll each ball in spiced sugar mixture. Place on baking sheet and bake for 11-12 minutes until edges are set.
