- In a mixing bowl, combine cream cheese, granulated sugar, and vanilla extract. Beat until smooth and blended. Scoop 18 portions and freeze for about 1 hour.
- Whisk together granulated sugar, ground ginger, ground cinnamon, ground nutmeg, ground allspice, and ground cloves in a small bowl.
- Mix flour, baking soda, and salt in a large bowl. In another bowl, cream butter and brown sugar until fluffy. Mix in egg yolks, molasses, and vanilla. Gradually combine dry ingredients to form dough.
- Preheat oven to 350°F. Flatten cookie dough, place frozen cheesecake filling in the center, wrap and roll into a ball.
- Roll each ball in spiced sugar mixture. Place on baking sheet and bake for 11-12 minutes until edges are set.
- Cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
