Cooking Steps
- Heat the vegetable oil in a large pot over medium heat until it glistens, about 1-2 minutes.
- Add the sliced boneless, skinless chicken breast to the hot oil, seasoning generously with salt and pepper. Sauté for 5-7 minutes until cooked through.
- In the same pot, add diced onion, minced garlic, and grated ginger. Stir well and sauté for 2-3 minutes until fragrant.
- Pour in chicken broth and water, stirring to combine. Bring the mixture to a boil, approximately 3-4 minutes.
- Add chopped carrots and diced bell pepper to the boiling broth, stirring well. Cook for about 5 minutes until softened.
- Stir in the egg or rice noodles, cooking according to package instructions (5-7 minutes).
- About 2 minutes before noodles are done, add the chopped bok choy or spinach to the pot and stir gently.
- Taste the soup and adjust seasoning with salt and pepper as needed.
