Cooking Steps
  1. Heat the vegetable oil in a large pot over medium heat until it glistens, about 1-2 minutes.
  2. Add the sliced boneless, skinless chicken breast to the hot oil, seasoning generously with salt and pepper. Sauté for 5-7 minutes until cooked through.
  3. In the same pot, add diced onion, minced garlic, and grated ginger. Stir well and sauté for 2-3 minutes until fragrant.
  4. Pour in chicken broth and water, stirring to combine. Bring the mixture to a boil, approximately 3-4 minutes.
  5. Add chopped carrots and diced bell pepper to the boiling broth, stirring well. Cook for about 5 minutes until softened.
  6. Stir in the egg or rice noodles, cooking according to package instructions (5-7 minutes).
  7. About 2 minutes before noodles are done, add the chopped bok choy or spinach to the pot and stir gently.
  8. Taste the soup and adjust seasoning with salt and pepper as needed.
  9. Ladle the soup into bowls and garnish with sliced green onions.
