Ingredients
  

  • 4 boneless skinless chicken breasts (about 1.5 pounds)
  • 1 pound baby potatoes halved
  • 4 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley chopped (for garnish)

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the olive oil, minced garlic, Italian seasoning, paprika, salt, and black pepper. Mix well.
  3. Add the halved baby potatoes to the bowl and toss until they are evenly coated with the garlic mixture.
  4. Place the seasoned potatoes in a single layer on one side of a large baking sheet.
  5. In the same bowl, add the chicken breasts and toss them in the remaining garlic mixture until well coated.
  6. Place the chicken breasts on the baking sheet next to the potatoes.
  7. Sprinkle the grated Parmesan cheese evenly over the chicken and potatoes.
  8. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the potatoes are tender.
  9. Remove from the oven and let it rest for 5 minutes. Garnish with fresh parsley before serving.
