Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup fresh parsley chopped
  • 1/4 cup olive oil
  • 4 cloves garlic minced
  • 1 tablespoon lemon juice

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. In a small bowl, mix together the salt, black pepper, garlic powder, and onion powder. Rub this spice mixture evenly over the chicken breasts.
  3. In a separate bowl, combine the grated Parmesan cheese, breadcrumbs, and chopped parsley.
  4. In another bowl, whisk together the olive oil, minced garlic, and lemon juice. Dip each chicken breast into the olive oil mixture, allowing any excess to drip off, then coat it in the breadcrumb mixture, pressing gently to adhere.
  5. Place the coated chicken breasts on the prepared baking sheet.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the coating is golden brown. An internal temperature of 165°F (75°C) should be reached.
  7. Remove from the oven and let the chicken rest for 5 minutes before serving.
