- Begin by taking your ribeye steaks out of the fridge and letting them reach room temperature for about 30 minutes. Season both sides with salt and pepper.
- Heat a heavy skillet over medium-high heat for about 2-3 minutes. Add 2 tablespoons of butter and allow it to melt. Sear the seasoned steak for 4-5 minutes.
- Flip the steak, add remaining butter and garlic to the skillet, and cook for another 4-5 minutes, basting the steak.
- Remove the steak from the skillet and let it rest for 5 minutes on a cutting board.
- Lower heat to medium, pour in heavy cream, and whisk while scraping up browned bits. Cook for about 2 minutes.
- Stir in grated Parmesan cheese until melted and sauce thickens, about 3-4 minutes. Season as needed.
- Slice the rested steak and drizzle the sauce over it. Garnish with parsley. Serve with sides.
