Preparation and Cooking Steps
- Preheat the oven to 425°F (220°C).
- In a bowl, toss halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread on a baking sheet.
- Roast the potatoes for 20-25 minutes, flipping halfway until golden and tender.
- Melt butter in a saucepan over medium heat, add minced garlic, sauté for 1-2 minutes, then stir in lemon juice and thyme.
- Season cod fillets with salt and pepper, warm olive oil in a skillet, and sear the cod for 3-5 minutes on each side.
- Pour garlic butter over cod fillets after cooking, allowing them to soak in the flavor.
- Plate the cod with roasted potatoes, drizzle remaining garlic butter on top, and garnish with fresh parsley.
