Preparation and Cooking Steps
  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, toss halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread on a baking sheet.
  3. Roast the potatoes for 20-25 minutes, flipping halfway until golden and tender.
  4. Melt butter in a saucepan over medium heat, add minced garlic, sauté for 1-2 minutes, then stir in lemon juice and thyme.
  5. Season cod fillets with salt and pepper, warm olive oil in a skillet, and sear the cod for 3-5 minutes on each side.
  6. Pour garlic butter over cod fillets after cooking, allowing them to soak in the flavor.
  7. Plate the cod with roasted potatoes, drizzle remaining garlic butter on top, and garnish with fresh parsley.
