Step-by-Step Instructions
  1. In a medium mixing bowl, combine Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract. Stir the mixture until it's smooth and well-combined.
  2. Take a small taste of the mixture and add more honey or maple syrup if needed for sweetness.
  3. Prepare a parchment-lined tray. Using a spoon or small cookie scoop, portion out the yogurt mixture into dollops of about 1 tablespoon each.
  4. Optionally, roll each dollop into a ball for a polished look.
  5. Transfer the tray to the freezer and let the bites freeze for at least 2 hours or until firm.
  6. Once frozen, remove the bites from the parchment and store them in a resealable bag or airtight container.
