Step-by-Step Instructions for Forgotten Chicken
  1. Preheat your oven to 375°F (190°C).
  2. Pat the bone-in chicken thighs dry and season generously with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat until shimmering.
  4. Sear the chicken thighs skin-side down for 5-7 minutes until golden brown, then flip and sear the other side for 3 minutes.
  5. Remove the chicken and sauté sliced onions in the same skillet for 8-10 minutes until caramelized.
  6. Add minced garlic and cook for 30 seconds, then pour in the chicken broth.
  7. Stir in Dijon mustard, thyme, and rosemary, then return the chicken skin-side up to the skillet.
  8. Scatter halved cherry tomatoes around the chicken and cover.
