- In a mixing bowl, whisk together 1 cup of cottage cheese and 3 large eggs until mostly smooth.
- Incorporate 1 cup of oat flour, 2 tablespoons of granulated sweetener, 1 teaspoon of baking powder, and a pinch of salt into the wet mixture.
- Stir in 1 teaspoon of vanilla extract, ensuring it’s evenly distributed.
- If desired, gently fold in fresh blueberries, chocolate chips, or chopped nuts.
- Preheat a non-stick frying pan or griddle over medium heat for about 5-7 minutes. Add a small pat of butter or cooking spray.
- Pour about 1/4 cup of batter onto the hot pan for each pancake; cook for 2-3 minutes until small bubbles form.
- Flip each pancake and cook for an additional 1-2 minutes, until golden brown on both sides.
- Gently press the center of each pancake. If they spring back, they’re done. If too soft, cook longer.
- To keep pancakes warm, transfer them to an oven set at 200°F (93°C).
