Step-by-Step Instructions
  1. In a mixing bowl, whisk together 1 cup of cottage cheese and 3 large eggs until mostly smooth.
  2. Incorporate 1 cup of oat flour, 2 tablespoons of granulated sweetener, 1 teaspoon of baking powder, and a pinch of salt into the wet mixture.
  3. Stir in 1 teaspoon of vanilla extract, ensuring it’s evenly distributed.
  4. If desired, gently fold in fresh blueberries, chocolate chips, or chopped nuts.
  5. Preheat a non-stick frying pan or griddle over medium heat for about 5-7 minutes. Add a small pat of butter or cooking spray.
  6. Pour about 1/4 cup of batter onto the hot pan for each pancake; cook for 2-3 minutes until small bubbles form.
  7. Flip each pancake and cook for an additional 1-2 minutes, until golden brown on both sides.
  8. Gently press the center of each pancake. If they spring back, they’re done. If too soft, cook longer.
  9. To keep pancakes warm, transfer them to an oven set at 200°F (93°C).
