- Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together flour, baking powder, salt, and optional spices.
- Cut in the cold butter until the mixture resembles coarse crumbs with some larger chunks.
- Create a well in the mixture and pour in the cold buttermilk. Gently mix until just combined.
- Shape the dough into a rectangular slab about 1-inch thick and laminate the dough.
- Roll the laminated dough to about 1.5 cm (½ inch) thick and cut out circles.
- Place half of the biscuit rounds on the baking sheet and top each with cheese and ham.
- Brush with beaten egg and bake for 15-18 minutes until golden brown.
- Cool slightly on a wire rack and garnish with herbs if desired, then serve warm.
