Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a 9x13-inch baking dish with parchment paper.
  2. Combine the pitted dates, salted butter, sugar, vanilla extract, and boiling water in a saucepan and stir over medium heat for about 10 minutes.
  3. In a mixing bowl, combine the rolled oats, baking powder, unsweetened dried coconut, flour, and brown sugar and mix thoroughly.
  4. Press half of the crumb mixture into the bottom of the prepared baking dish, then pour the cooled date mixture over it.
  5. Sprinkle the remaining crumb mixture over the date filling and press gently.
  6. Bake for about 40 minutes until the top is golden brown.
  7. Remove from oven and cool completely before slicing into bars.
