Ingredients
  

  • 2 medium zucchinis sliced into 1/4-inch rounds
  • 1 cup cherry tomatoes halved
  • 1 cup corn kernels fresh, frozen, or canned
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh basil or 1 tablespoon dried basil
  • 2 cloves garlic minced
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with a little olive oil.
  2. In a large mixing bowl, combine the sliced zucchini, cherry tomatoes, corn, minced garlic, salt, black pepper, and red pepper flakes (if using). Toss well to combine.
  3. Spread the vegetable mixture evenly in the prepared baking dish.
  4. In a separate bowl, mix together the cheddar cheese, Parmesan cheese, breadcrumbs, and basil. Sprinkle this cheese mixture evenly over the vegetables in the baking dish.
  5. Drizzle the olive oil over the top of the cheese and breadcrumb mixture.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown, and the zucchini is tender.
  7. Allow to cool for a few minutes before serving.
