In a small bowl, whisk together the soy sauce, grated ginger, honey, rice vinegar, minced garlic, and sesame oil until well combined.
Place the cod fillets in a baking dish and season with salt and pepper. Pour the ginger soy mixture over the cod, ensuring the fillets are well coated.
Bake in the preheated oven for 12-15 minutes, or until the cod flakes easily with a fork and is cooked through.
Remove from the oven and let it rest for a couple of minutes. Garnish with chopped green onions and sesame seeds before serving.
