  • 1 pound cod fillets
  • 1/4 cup soy sauce
  • 2 tablespoons fresh ginger grated
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 2 cloves garlic minced
  • 1 tablespoon sesame oil
  • 1 tablespoon green onions chopped (for garnish)
  • 1 teaspoon sesame seeds for garnish
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together the soy sauce, grated ginger, honey, rice vinegar, minced garlic, and sesame oil until well combined.
  3. Place the cod fillets in a baking dish and season with salt and pepper. Pour the ginger soy mixture over the cod, ensuring the fillets are well coated.
  4. Bake in the preheated oven for 12-15 minutes, or until the cod flakes easily with a fork and is cooked through.
  5. Remove from the oven and let it rest for a couple of minutes. Garnish with chopped green onions and sesame seeds before serving.
