Step-by-Step Instructions
  1. Pat the chicken thighs dry with paper towels and place them in the bottom of your crockpot.
  2. In a mixing bowl, combine soy sauce, honey, minced garlic, and grated ginger. Whisk until blended.
  3. Pour the sauce evenly over the chicken in the crockpot.
  4. Cover and set the crockpot to cook on low for 4 to 5 hours or high for 3 to 4 hours.
  5. Remove the chicken and mix cornstarch with water to create a slurry. Stir into the sauce and cook on high for 5 minutes to thicken.
  6. Return chicken to the thickened sauce, coat well, and serve over rice or noodles.
