Ingredients
  

  • 2 large chicken breasts about 1.5 pounds, boneless and skinless
  • 2 medium zucchinis sliced into rounds
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup cherry tomatoes halved
  • 1/2 cup grated Parmesan cheese optional

Method
 

  1. Preheat your oven to 400°F.
  2. In a large bowl, combine the olive oil, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix well.
  3. Add the chicken breasts to the bowl and coat them evenly with the seasoning mixture.
  4. In a separate bowl, toss the sliced zucchini and cherry tomatoes with a little olive oil, salt, and pepper.
  5. Spread the seasoned chicken breasts in a single layer on a baking sheet lined with parchment paper.
  6. Arrange the zucchini and cherry tomatoes around the chicken on the baking sheet.
  7. If using, sprinkle the grated Parmesan cheese over the chicken and vegetables.
  8. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
  9. Remove from the oven and let it rest for 5 minutes before slicing. Serve warm.
