Ingredients
  

For the Cheesecake
  • 16 oz Cream Cheese full-fat for best texture
  • 1 cup Granulated Sugar can substitute with stevia or coconut sugar
  • 3 large Eggs room temperature
  • 1 tbsp Vanilla Extract or almond extract
For the Crust
  • 1 cup Graham Cracker Crust or Gluten-Free Alternative
For the Strawberry Swirl
  • 2 cups Fresh Strawberries thawed and drained frozen strawberries work too

Method
 

Prepare the Crust
  1. Preheat your oven to 325°F (160°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press into a springform pan. Bake for 10 minutes and cool.
Make the Cheesecake Filling
  1. Beat cream cheese until smooth. Gradually add sugar. Add eggs one by one, mixing well. Stir in vanilla.
Create Strawberry Swirl
  1. Puree fresh strawberries until smooth. Drop dollops over the cheesecake filling and swirl with a knife.
Bake the Cheesecake
  1. Pour cheesecake filling over the crust. Bake for 50-60 minutes until edges are set and center jiggles slightly.
Cool and Chill
  1. Cool at room temperature for 1 hour. Cover and chill in the refrigerator for at least 4 hours or overnight.
Serve and Enjoy
  1. Run a knife around edges of the pan, release sides, and cut into slices. Serve with whipped cream and strawberry slices.
