Ingredients
  

  • 1 pound boneless skinless chicken breasts, cut into 1-inch cubes
  • 1 cup dill pickle juice
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • Wooden or metal skewers if using wooden skewers, soak in water for 30 minutes

Method
 

  1. In a large bowl, combine the chicken cubes and dill pickle juice. Marinate in the refrigerator for at least 1 hour, or up to 4 hours for more flavor.
  2. Preheat your grill or grill pan over medium-high heat.
  3. In a separate bowl, mix the olive oil, garlic powder, onion powder, smoked paprika, black pepper, and salt.
  4. Remove the chicken from the marinade and discard the marinade. Toss the chicken cubes in the spice mixture until evenly coated.
  5. Thread the chicken onto the skewers, leaving a little space between each piece for even cooking.
  6. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
  7. Remove the skewers from the grill and let them rest for 5 minutes before serving.
