- In a large mixing bowl, beat cream cheese and powdered sugar together using an electric mixer on medium speed for about 2–3 minutes, or until smooth and creamy.
- Pour in vanilla extract into the cream cheese mixture and beat on low speed for about 30 seconds.
- Gently fold in whipped cream using a rubber spatula for about 2–3 minutes.
- Slice fresh strawberries and place them evenly at the bottom of the graham cracker crust.
- Spoon the cream cheese mixture over the layer of strawberries in the crust, spreading evenly.
- Cover the dessert with plastic wrap and refrigerate for at least 2 hours.
- Once chilled, remove from refrigerator, slice into wedges, and serve chilled.
