Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare an 8 x 5 inch loaf pan by greasing and flouring it.
  2. Whisk together 0.5 cup brown sugar with 1.5 teaspoons ground cinnamon in a small bowl and set it aside.
  3. In a large mixing bowl, whisk together 2 large eggs and 0.5 cup granulated sugar until blended. Stir in 0.5 cup melted butter and 1 teaspoon vanilla extract until smooth.
  4. Gently incorporate 1.5 cups all-purpose flour, 1 teaspoon baking powder, 0.5 teaspoon baking soda, and 0.25 teaspoon salt into the wet mixture until combined.
  5. Fold in 2 cups chopped apples into the batter ensuring they are evenly distributed.
  6. Pour half of the batter into your prepared loaf pan, sprinkle three-quarters of the cinnamon-sugar mixture on top.
  7. Add the remaining batter on top and sprinkle the rest of the cinnamon-sugar mixture, swirling it gently through the batter.
