- Preheat your oven to 350°F (175°C) and prepare an 8 x 5 inch loaf pan by greasing and flouring it.
- Whisk together 0.5 cup brown sugar with 1.5 teaspoons ground cinnamon in a small bowl and set it aside.
- In a large mixing bowl, whisk together 2 large eggs and 0.5 cup granulated sugar until blended. Stir in 0.5 cup melted butter and 1 teaspoon vanilla extract until smooth.
- Gently incorporate 1.5 cups all-purpose flour, 1 teaspoon baking powder, 0.5 teaspoon baking soda, and 0.25 teaspoon salt into the wet mixture until combined.
- Fold in 2 cups chopped apples into the batter ensuring they are evenly distributed.
