- Wash 2 cups of fresh strawberries, pat dry, remove green tops, slice, and blend with 1/4 cup of granulated sugar until smooth. Reserve 1/2 cup puree.
- In a cold mixing bowl, whip 1 cup of heavy whipping cream on medium-high until stiff peaks form, about 4-5 minutes.
- Gently fold the remaining strawberry puree into the whipped cream until well combined.
- Layer 1/2 cup of reserved strawberry puree at the bottom of serving glasses.
- Spoon the strawberry mousse on top of the layered puree in each glass, smoothing the top.
- Cover glasses with plastic wrap and refrigerate for at least 1 hour to set.
- Garnish with fresh strawberry slices before serving. Enjoy!
