Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9x5-inch loaf pan by spraying it generously with non-stick spray.
  2. In a medium bowl, combine 2 cups of chopped medium baking apples, 1/2 cup of light brown sugar, 1 teaspoon of ground cinnamon, and 1/4 teaspoon of ground ginger. Toss everything together until the apples are well coated.
  3. In a large mixing bowl, whisk together 1 large egg, 1 cup of granulated sugar, 1/2 cup of vegetable oil, 1 cup of full-fat sour cream, and 1 teaspoon of vanilla extract until the mixture is smooth and creamy.
  4. In a separate bowl, sift together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of kosher salt. Gradually add this dry mixture to the wet ingredients, gently mixing until just combined.
  5. Using a spatula, gently fold three-quarters of the prepared apple mixture into the batter.
  6. Pour half of the batter into your prepared loaf pan, spreading it evenly. Then, sprinkle the remaining apple mixture on top and finish by pouring the rest of the batter over the apples.
  7. Place the loaf pan in the preheated oven and bake for 50–55 minutes.
  8. Once baked, remove the loaf pan from the oven and let it cool for at least 30 minutes on a wire rack.
  9. While the bread cools, make the glaze by whisking together 1 cup of powdered sugar, 1 teaspoon of vanilla extract, and enough milk to achieve a smooth consistency. Drizzle this glaze over the cooled Amish Apple Fritter Bread.
