- Preheat your oven to 350°F (175°C). Grease your baking dish.
- Cook the lasagna noodles according to package instructions until al dente, about 8-10 minutes.
- In a large mixing bowl, combine shrimp, spinach, ricotta, mozzarella, Parmesan, egg, garlic, salt, and pepper. Mix until creamy.
- Fill each lasagna noodle with the shrimp filling and roll tightly. Place seam-side down in the greased dish.
- In a saucepan, sauté onion and garlic until translucent. Add red peppers, cream, broth, and paprika. Simmer until thickened.
- Spread some sauce in the dish, place pasta rolls in a layer, and pour remaining sauce on top. Bake for 40 minutes.
- Let cool for 5-10 minutes, then garnish with extra Parmesan and herbs. Serve and enjoy!
