Step-by-Step Instructions
  1. In a medium bowl, whisk together flour, baking powder, and salt until evenly combined.
  2. In a large mixing bowl, cream butter and sugar until light and fluffy, then mix in egg, vanilla, and peppermint extract.
  3. Gradually mix dry ingredients into the wet mixture until just combined.
  4. Divide the dough in half; mix red gel food coloring into one half.
  5. Wrap dough in plastic wrap and chill in the refrigerator for 30 minutes.
  6. Roll out each half of the dough on a floured surface to approximately 10 by 12 inches.
  7. Roll the layered dough into a log shape, wrap, and refrigerate for at least 2 hours.
  8. Preheat your oven to 375°F and line your baking sheets with parchment paper.
  9. Optionally, brush the log with water or egg white and roll it in coarse sugar.
  10. Slice the log into 1/4-inch rounds and place on baking sheets, spacing them 2 inches apart.
