Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Wash and slice the red bell peppers into quarters. Place skin-side up on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for about 20 minutes until tender.
  3. Once roasted, let the peppers cool then blend them with garlic and lemon juice until smooth.
  4. In a skillet, heat olive oil over medium-high heat. Season the tilapia fillets with salt and black pepper, then sauté for 3-4 minutes on each side until golden brown.
  5. Pour the roasted pepper sauce over the fish and let it simmer for 1-2 minutes before serving.
