Step-by-Step Instructions
- In a large skillet, mix together the coconut milk, chicken broth, fish sauce, fresh lime juice, grated ginger, minced garlic, sliced chilies, brown sugar, and lime zest. Heat the mixture over medium heat, stirring occasionally, until it begins to gently simmer, which should take about 3-5 minutes.
- Carefully place the cod fillets into the simmering poaching liquid in the skillet. Reduce the heat to low and cover with a lid. Poach the cod for 8-10 minutes, or until the fish flakes easily with a fork.
- During the last few minutes of cooking, add the fresh spinach leaves to the skillet. Gently stir them into the poaching liquid and allow to wilt for about 2-3 minutes.
- Once the cod is cooked and spinach is wilted, carefully transfer to serving plates. Garnish with fresh cilantro and serve alongside lime wedges.

Notes
Keep the poaching liquid at a gentle simmer to prevent the cod from drying out. Store leftovers in an airtight container for up to 2 days.
