Ingredients

For the Poaching Liquid
  • 1 can Coconut Milk Adds creaminess and rich flavor; substitute with light coconut milk for a lower-calorie option.
  • 1 cup Chicken Broth Provides depth to the poaching liquid; vegetable broth can be used for a vegetarian alternative.
  • 2 tablespoons Fish Sauce Imparts essential umami flavor in Thai cuisine; adjust the quantity for lower saltiness as desired.
  • 2 tablespoons Fresh Lime Juice Balances the richness of coconut milk; can be replaced with lemon juice for a different citrus note.
  • 1 teaspoon Grated Ginger Adds warmth and spice; fresh ginger is preferred, but powdered ginger can suffice in a pinch.
  • 2 cloves Minced Garlic Enhances flavor complexity; can switch to garlic powder if fresh is unavailable.
  • 1 teaspoon Sliced Chilies Adds heat; omit for a milder version.
  • 1 tablespoon Brown Sugar Balances acidity and heat; alternative sweeteners include honey or maple syrup.
  • 1 teaspoon Lime Zest Provides extra brightness; use lemon zest as an alternative if needed.
For the Cod and Vegetables
  • 4 pieces Cod Fillets A tender, flaky source of protein; can substitute with other firm white fish like haddock or snapper.
  • 2 cups Fresh Spinach Leaves Add color and nutrition; can swap with kale or Swiss chard.
  • 1/4 cup Fresh Cilantro For garnishing; enhances flavor and presentation; parsley can be used as a substitute.

Equipment

  • large skillet

Method

Step-by-Step Instructions
  1. In a large skillet, mix together the coconut milk, chicken broth, fish sauce, fresh lime juice, grated ginger, minced garlic, sliced chilies, brown sugar, and lime zest. Heat the mixture over medium heat, stirring occasionally, until it begins to gently simmer, which should take about 3-5 minutes.
  2. Carefully place the cod fillets into the simmering poaching liquid in the skillet. Reduce the heat to low and cover with a lid. Poach the cod for 8-10 minutes, or until the fish flakes easily with a fork.
  3. During the last few minutes of cooking, add the fresh spinach leaves to the skillet. Gently stir them into the poaching liquid and allow to wilt for about 2-3 minutes.
  4. Once the cod is cooked and spinach is wilted, carefully transfer to serving plates. Garnish with fresh cilantro and serve alongside lime wedges.
