For the Streusel Topping
  • 1/3 cup Sugar Adjust to taste
  • 2 tablespoons Melted butter Coconut oil can be used
  • 1 teaspoon Cinnamon Add more if desired

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare muffin pans.
  2. In a bowl, mix the flour, baking soda, baking powder, and salt well.
  3. In another bowl, combine brown sugar, buttermilk, vegetable oil, egg, and vanilla until smooth.
  4. Fold the dry ingredients into the wet mixture until just combined.
  5. Gently fold in the rhubarb and walnuts until evenly distributed.
  6. Fill each muffin cup nearly to the top with the batter.
  7. Mix sugar, melted butter, and cinnamon to create the streusel, then sprinkle over the batter.
  8. Bake for about 25 minutes or until golden brown and a toothpick comes out clean.
  9. Cool in the pans for about 10 minutes before transferring to a wire rack.
