Step-by-Step Instructions
  1. In a large pot, heat a tablespoon of olive oil over medium heat. Add chopped onion, minced garlic, and diced bell pepper. Sauté for about 5 minutes until the onion is translucent and the peppers are softened.
  2. Stir in the sliced smoked sausage and continue to cook for an additional 5–7 minutes until browned.
  3. Add Cajun seasoning, uncooked penne pasta, chicken broth, and heavy cream. Stir well to combine all ingredients.
  4. Bring to a gentle boil, then reduce to a simmer. Cover and cook for about 20 minutes, stirring occasionally.
  5. Remove from heat and stir in Parmesan cheese until melted.
  6. Serve immediately, garnished with fresh parsley if desired.
