For the Slaw
  • 1 cup Diced Mango Use ripe mango for best flavor.
  • 2 cups Shredded Cabbage
  • 1 piece Red Bell Pepper Diced.
  • 1/4 cup Chopped Cilantro Optional.
For the Honey Lime Cream Dressing
  • 1/2 cup Mayonnaise Can substitute with Greek yogurt.
  • 2 tablespoons Honey
  • 1 tablespoon Lime Juice Adjust to taste.

Preparation Steps
  1. Preheat your grill to medium-high heat (around 400°F).
  2. In a mixing bowl, combine chicken thighs with jerk seasoning and olive oil. Marinate for at least 5 minutes.
  3. Grill marinated chicken for 6-7 minutes on each side until it reaches an internal temperature of 165°F.
  4. In a large mixing bowl, combine diced mango, shredded cabbage, red bell pepper, and chopped cilantro. Toss gently.
  5. In a separate bowl, whisk together mayonnaise, honey, lime juice, salt, and pepper.
  6. Slice the grilled chicken and serve over the mango slaw, drizzling honey lime cream dressing on top.
