Step-by-Step Instructions

  3. In a large bowl, combine the Greek yogurt, granulated sugar, eggs, lemon zest, lemon juice, vegetable oil, and vanilla extract.
  4. Slowly fold the dry ingredient mixture into the wet ingredients until just combined.
  5. Pour the batter into the prepared loaf pan and spread the mixture evenly.
  6. Bake for 45 to 55 minutes, checking for doneness with a toothpick.
  7. Allow the loaf to cool in the pan for about 10 minutes before transferring to a wire rack.
  8. For the optional glaze, whisk powdered sugar with fresh lemon juice until smooth. Drizzle over the cooled loaf.
