Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Roll out the thawed puff pastry until 1/8 inch thick and cut out eight 5-inch circles.
  3. Score a ¼-inch border around each pastry circle.
  4. Add about 2 tablespoons of goat cheese in the center of each pastry circle. Season with salt, pepper, and Herbs de Provence.
  5. Sprinkle chopped walnuts on top and drizzle with honey.
  6. Whisk together egg with warm water for egg wash and brush the borders of each pastry circle.
  7. Bake the tarts for approximately 20 minutes or until golden brown.
  8. Cool slightly, garnish with thyme, and serve warm.
