Ingredients
  

Base Ingredients
  • 1/2 cup creamy peanut butter or almond/sunflower seed butter for a different flavor
  • 1/4 cup honey or maple syrup for vegan option
  • 1 cup granola select a lower-sugar granola or crush your own
Filling Ingredients
  • 2 cups Greek yogurt or a thick vegan yogurt like coconut or almond
  • 1 teaspoon vanilla extract optional
Optional Toppings
  • fresh berries like blueberries or strawberries
  • crushed walnuts or any preferred nuts

Method
 

Preparation Steps
  1. Mix together peanut butter, honey, and a pinch of salt until smooth.
  2. Add crushed granola to the peanut butter mixture and stir until coated.
  3. In a separate bowl, whisk Greek yogurt with vanilla extract until smooth.
  4. Line a muffin tin with muffin liners.
  5. Spoon the granola base into the liners and press down firmly.
  6. Add the yogurt mixture over the granola bases, filling three-quarters full.
  7. Sprinkle optional toppings over the yogurt layer.
  8. Freeze for at least 30-60 minutes until solid.
  9. Let sit at room temperature for 2-3 minutes, then remove from liners and enjoy.
