Preparation Steps
- Thaw puff pastry sheets for 30-40 minutes; preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Unfold puff pastry and cut into squares. Score edges and brush with beaten egg.
- Bake pastry squares in preheated oven for 12-15 minutes until golden brown; cool slightly and press centers down.
- In a skillet, heat olive oil, sauté shallots and garlic for 3-5 minutes. Add spinach and cook until wilted.
- Combine spinach mixture with cream cheese, heavy cream, parmesan, nutmeg, salt, and pepper in a bowl.
- Spoon filling into pastry wells, crack an egg into each well, and sprinkle with salt and pepper.
- Return to oven and bake for 10-15 minutes until egg whites are set but yolks are slightly runny.
- Garnish with chives and serve immediately.
