  • 1 Egg (beaten) For egg wash

  • 2 cloves Garlic (minced)
  • 4 cups Fresh Spinach (washed and chopped) Can substitute with kale or Swiss chard
  • 4 ounces Cream Cheese (softened)
  • 1/2 cup Heavy Cream Light cream can be used as a lighter option
  • 1/2 cup Grated Parmesan Cheese Substitute with Gruyère or cheddar if desired
  • 1/4 teaspoon Nutmeg Optional
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Black Pepper Adjust to taste
For the Assembly
  • 4 large Eggs Adjust based on preference
  • 2 tablespoons Fresh Chives (for garnish)

Method
 

Preparation Steps
  1. Thaw puff pastry sheets for 30-40 minutes; preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Unfold puff pastry and cut into squares. Score edges and brush with beaten egg.
  3. Bake pastry squares in preheated oven for 12-15 minutes until golden brown; cool slightly and press centers down.
  4. In a skillet, heat olive oil, sauté shallots and garlic for 3-5 minutes. Add spinach and cook until wilted.
  5. Combine spinach mixture with cream cheese, heavy cream, parmesan, nutmeg, salt, and pepper in a bowl.
  6. Spoon filling into pastry wells, crack an egg into each well, and sprinkle with salt and pepper.
  7. Return to oven and bake for 10-15 minutes until egg whites are set but yolks are slightly runny.
  8. Garnish with chives and serve immediately.
