- Preheat your oven to 425°F (220°C) and spray an 8×8-inch baking dish with nonstick cooking spray.
- In a large mixing bowl, combine garlic powder, paprika, dried oregano, cumin, salt, and black pepper with extra virgin olive oil.
- Add the chopped boneless skinless chicken breast, sliced yellow onion, and chopped zucchini into the bowl with the marinade. Toss until well coated.
- If time allows, cover the bowl and let marinate in the refrigerator for up to 24 hours.
- Spread the mixture evenly in the prepared baking dish.
- Bake uncovered for about 30 minutes until the chicken is cooked through and zucchini is tender.
- Remove from the oven, let sit a few minutes, then serve hot.
