  • 1 teaspoon Garlic Powder or adjust to taste with fresh garlic
  • 1 teaspoon Paprika smoked paprika can enhance flavor
  • 1 teaspoon Dried Oregano can swap for Italian seasoning mix
  • 1 teaspoon Cumin leave out if unavailable or use coriander
  • 1 teaspoon Salt kosher or sea salt recommended
  • 1/2 teaspoon Black Pepper freshly ground for best flavor

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and spray an 8×8-inch baking dish with nonstick cooking spray.
  2. In a large mixing bowl, combine garlic powder, paprika, dried oregano, cumin, salt, and black pepper with extra virgin olive oil.
  3. Add the chopped boneless skinless chicken breast, sliced yellow onion, and chopped zucchini into the bowl with the marinade. Toss until well coated.
  4. If time allows, cover the bowl and let marinate in the refrigerator for up to 24 hours.
  5. Spread the mixture evenly in the prepared baking dish.
  6. Bake uncovered for about 30 minutes until the chicken is cooked through and zucchini is tender.
  7. Remove from the oven, let sit a few minutes, then serve hot.
