Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Coat a baking dish with nonstick spray.
  2. Season the chicken breasts with salt, pepper, and half of the Italian seasoning. Let sit for a few minutes.
  3. Wash and slice the zucchini into ½-inch thick rounds.
  4. Layer the seasoned chicken in the baking dish and surround with zucchini. Drizzle with olive oil.
  5. Sprinkle remaining Italian seasoning and garlic powder over the chicken and zucchini. Top with shredded cheese.
  6. Bake for 30-35 minutes until chicken reaches 165°F (75°C) and cheese is golden-brown.
