For the Pastry
  • 1 package Puff Pastry thawed
For the Cream Filling
  • 1 cup Pastry Cream store-bought or homemade
  • 1/2 cup Almond Powder or almond flour
For the Topping
  • 1 cup Apricot Halves fresh or canned, drained
  • 1 large Egg or milk for egg wash

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Roll out thawed puff pastry on a lightly floured surface and slice into 4x4 inch squares.
  3. Spoon a generous dollop of pastry cream into the center of each puff pastry square.
  4. Sprinkle a teaspoon of almond powder over the pastry cream in each square.
  5. Place an apricot half on top of the almond powder in each pastry.
  6. Fold the corners of each pastry square over the filling to form a pocket and seal edges.
  7. Whisk an egg (or milk) to create the egg wash and brush the tops of the pastries.
  8. Bake in the preheated oven for about 20 minutes or until puffed and golden brown.
  9. Remove from oven and cool on a wire rack for a few minutes before serving.

Notes
