Preparation Steps
- Preheat your oven to 350°F (175°C) for perfect cooking.
- Sauté the chopped onion and bell pepper in olive oil for 3-4 minutes, then add spinach and cook for 2-3 more minutes.
- Whisk together eggs and milk in a bowl, then fold in cottage cheese, seasoning with Italian seasoning, salt, and pepper.
- Combine the sautéed vegetables with the egg and cottage cheese mixture, folding in the shredded cheddar cheese.
- Grease a 9-inch pie dish and pour the mixture into it, spreading evenly.
