  2. Let the mixture cool at room temperature for about 1 hour to thicken.
  3. Use a rounded teaspoon or small ice cream scoop to portion the chocolate mixture and roll into balls.
  4. Melt an additional 10 ounces of white chocolate. Dip each truffle into the melted white chocolate, allowing excess to drip off.
  5. Quickly sprinkle chocolate sprinkles on top of each truffle before the coating sets.
